Baking: My Fave Mix And Match Pancakes

Hi guys, and welcome back to my blog.

This is a simple pancake mix for an ordinary day; sometimes I choose a savoury topping for breakfast, or a sweeter one for pudding. I'll list some of my fave combinations at the bottom of the page, so you can see how to make them taste better. Here's the method for you to try out:

 What you need:
  • 1 mug wholemeal flour
  • 1 mug whole milk
  • 1 egg
  • 1 or 2 tbsp chia seeds
OK, this is a super simple recipe - It'll only take you a minute or two. It's enough for a family breakfast, and you have more or less depending on the size you make them. Before you start, you might want to put a small amount of oil into a medium sized saucepan - this will help the pancakes not to stick to the pan. Then, you mix all the ingredients together in a jug, then pour a small amount into your saucepan. If you want bigger pancakes, then pour more in, and vice versa. Swirl the mix around the pan for a few seconds to make it the right size, and let it cook for a minute. Gently press the middle of it down so all of it can cook. When the edges start to bubble, it is safe to prise it from the pan and flip, unless you withdraw the spoon thing and loads of pale coloured goo comes off. Eventually it will be ready, and so carefully flip it over. You really want to be careful with this, as I know so many people who have had accidents with flipping pancakes! When the edges start bubbling again, slide the pancake off the pan and onto a plate, and enjoy. Now try out one of my toppings below, or make up one of your own!
