Baking - Sugar-free Blueberry Muffins

These are definitely ideal for a healthy, energy boosting snack and full of goodness.

These muffins are great for lunches, or just for an energy snack in your day. I've tried these once or twice, and they work really well with any types of berries. Berries are low in sugar comapred to most fruits. Once a month we bake a double batch of these (just double each of the ingredients) and bung them in the freezer ready to get one out for our packed lunch each day we fancy one. I love using blueberries in muffins; they taste really nice! Have fun!

What you need:
  • 1 egg
  • 150ml of coconut oil
  • 175ml of full-fat milk
  • 75g of porridge oats
  • 125g wholemeal plain flour
  • 3 tsp baking powder
  • 25g stevia (this is a sweetner to use instead of sugar but they also actually taste fine without any of this)
  • 1/2 tsp mixed spice
  • 1/2 tsp ground cinnamon
  • 250g blueberries
  • 25g chia seeds
So, how to make it. Preheat your oven to 180 degrees c/350 degrees f/gas mark 4. Beat the egg, and add the oil and milk. (You'll have to melt the coconut oil in a pan first) Mix them together. In a separate bowl, mix together everything else. Pour it over the other mixture and stir until it's only just moist, but make sure you don't over mix it! Now you can evenly spread the mix between 12 muffin cases, and bake until they're golden, and completely risen. The average baking time would be about 20-25 minutes. Enjoy!
